To cook beans quickly, combine dried beans with water a bay leaf and thyme sprig in a saucepan. Bring the beans to a boil, reduce the heat, then cover and simmer until beans are tender. Around 30 minutes, depending on the bean variety. Check the beans occasionally to see if they are covered with the cooking liquid. If beans are exposed, add very hot water to the pot to cover the beans.
